Soft Masala Dosa with Red chutney

Dosa is a fermented crepe made from rice batter and black lentils. It is a staple dish in South Indian states of Tamil nadu, Andhra Pradesh, Karnataka, Kerala and Telangana. Its a common breakfast dish and street food, and high in carbohydrates, and contains no sugar or saturated fats. As its constituent ingredients are rice and urad dal, it is also a source of protein. The fermentation process increases the vitamin B and vitamin C content. Dosa are considered a high Glycemic index food and should be avoided by diabetics. Dosa are low in calorie. Dosa can be stuffed with fillings of vegetables and sauces to make a quick meal. 



Its rice based Masala Dosa with Potato filling eaten along with sambar and coconut chutney. It's fantastic aroma which wafts the air! The difference between regular Masala dosa and this soft Masala Dosa is the garlic chutney which is spread thinly over the dosa before the potato curry is laid over it !! The texture of the dosas may be either thin and crisp or have a crisp exterior with a spongy uttapam like interior. And here I am not making this Dosa crispy...It will be soft from outside and from inside too. Though this Dosa cannot be replaced by anything else, for commercial purpose lot of varieties of dosas can be stuffed with different varieties of vegetables including cheese and Paneer. How to make Red chutney

Ingredients:

 1/2 cup Bengal Gram (Chana daal)
 8 Cloves Garlic
 4-5 Dried red chili
 1Tbsp Lemon juice
 Salt to taste
 1/4 tsp Roasted Cumin powder
 Water as required


Method:

1. Take a mixer jar and place all the ingredients, add little bit amount of water, Grind it and make a smooth paste.

Your Red chutney is ready to use!




How to make Potato Sabji

Ingredients:

1 Tbsp Oil
4 Potato, Boiled and chopped
2 Onion, Slice chopped
1/2 tsp Mustard Seeds
1/2 tsp Lemon juice
7-8 Curry leaves                         
1 Green chili, chopped
1/4 tsp Turmeric Powder
Salt to taste


Method:

1. Heat a pan with oil and add mustard seed, add cumin seeds; when they crackle add onion, Curry leaves and green chili, Cook till onion becomes golden color.

2. Add potato, turmeric powder, coriander powder, salt, lemon juice and mix well.

Potato Sabji is ready :)

Soft Masala Dosa

Ingredients

    31/2 Cup Dosa Batter 

    Oil to shallow fry
    1/2 tsp Chaat masala
    11/2 Cup Potato bhaji Sabji
    Red chutney as required


Method

1. Heat a dosa tawa. Pour a small ladleful of dosa batter onto the Tawa and spread evenly with the back of the ladle to make a medium-sized dosa.




2. Drizzle half a teaspoon of oil around the dosa and cook over low heat for few seconds. Spread a little red chutney all over the dosa. Place some potato bhaji, in the center of the dosa.


3. Continue to cook the dosa over low heat till the dosa turned lil brown. Gently fold over one side and transfer the dosa to a serving plate. Serve hot with Sambar !
